Serves 4 as a starter or 2 as a main
½ cup (125 mL) black beluga lentils
1 cup (250 mL) water
4 cups (1 L) raw watercress
2 cups (500 mL) raw golden or red beets, peeled and julienned into matchsticks
½ cup (125 mL) goat cheese
Pomegranate molasses, to taste
